HOW TO MAKE SWEET POTATO SPUD

 A healthy take on the classic potato spud, Clean Cooking brings you the sweet potato spud, topped with fresh ingredients!

(serves 1)

Ingredients:

1 large sweet potato (purple or orange)

1 tsp virgin coconut oil

toppings:

1 handful of spinach leaves

1 carrot grated

1 floret of raw broccoli, finely cut

½ hass avocado sliced

1 truss tomato sliced

1 spring onion stalk sliced

Method:

1. Pre head oven to 180 degrees Celsius

2. Boil whole sweet potato in a large pot of water on the stove until almost cooked (This will speed up the baking process!)

3. Make a 2 inch slice lengthwise on the sweet potato, add a teaspoon of coconut oil & wrap in aluminum foil

4. Place sweet potato in oven and bake for around 15 minutes

5. Remove from oven & aluminum and place in a bowl, cut into four.

6. Top with fresh ingredients & serve immediately
